Dot Young’s sculptural installation invites the audience to enter the surreal and flamboyant world of 19th Century French chef and pâtissier Urbain Dubois. Chef-de-cuisine to the Prussian court, Dubois fused his passion for cuisine with that of architecture, to produce the extravagant ‘pièce montées’, replicated in the gallery.
